A mouth-watering and hearty treat perfect for a light lunch or dinner

3 x 180g SMS Tuna in oil
2 slices day old bread, roughly crumbed
2 cloves garlic, crushed
4 cups cooked & drained spaghetti
½ cup finely chopped parsley
Juice and rind of 1 lemon
150g ricotta, crumbled
Place breadcrumbs in a hot non-stick frypan and toast for 2 minutes. Reduce heat and add garlic and tuna oil, cook for 2 minutes or until crisp then set aside. Toss tuna, cooked spaghetti, parsley and lemon in the pan and allow to heat through. Remove from heat, add ricotta and served topped with the crunchy garlic breadcrumbs.
